Ingredients
- 400 g halibut fillet
- 3 tbsp chilli bean paste (can be bought in Chinese grocery stores)
- 100 ml water
- 2 cloves garlic – chopped
- 1 inch ginger – chopped
- 1 tbsp oil
- 2 tomatoes – diced
- 1 red chilli – sliced
- Salt/pepper/sugar to taste
Method
In a frying pan, heat oil and sweat ginger and garlic until soft
Add chilli bean paste and water; bring to a boil
Add diced tomato and sliced chilli and season to taste
Steam fish for about 3 minutes, remove and discard excess water
Pour sauce over and garnish
