Oven-baked Nordic Halibut with Turmeric Coconut Paste

Nordic Halibut, turmeric and coconut? Explore this incredible dish inspired by Malayisian cuisine.


  • 400 g Nordic Halibut steak
  • 1 inch fresh turmeric
  • 1 inch blue ginger
  • 1 inch ginger
  • 1 lemongrass
  • 3 cloves garlic
  • 5 shallots
  • 2 lime leaves
  • 6 red chillis
  • 200 ml coconut milk
  • Salt/pepper/sugar to taste
  • 100 ml cooking oil


In a mortar and pestle, pound turmeric, blue ginger, ginger, lemongrass, garlic, shallot, lime leaves and red chilli into a paste.
Once done, heat a fry pan and add oil, cook paste until fragrant.
Then add coconut milk, bring to a boil and allow to slightly reduce into a rather thick mixture.
Season mixture and set aside to cool down.
Spread cooked paste on fish and bake in an oven heated to 180°C for about 15 minutes.
Serve with a slice of lime on the side.
