Expect the Unexpected: Nordic Halibut Sukibiki

Here is another highly technical fish to Sukibiki. Smaller warm water flatfish such as Hirame and Fluke are much easier, but their larger cold water cousin such as this one from Norway is completely different. It has a very tough skin, small scales and inconsistent textures all around. Some spots are leathery tough, and some spots are tenderly soft! It is all about the feedback you get from your knife, adjusting as you go or else you can very easily break through the skin. Fun fact! This is the only fish where my knife gets sharper as I work through the scaling process. it’s like I’m sharpening my knife on 6000grit… lol @cleanfishllc @nordichalibut produces the finest halibut in the world.
